APPLE CRUMBLE RECIPE
A few weeks back, I shared a pic of the DELICIOUS apple crumble recipe from The Cleanse. As promised, I am posting the recipe here for your culinary pleasure!

Apple Crumble
6 medium sized pink lady apples
generous splash of apple juice or water
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
Crumble Topping
1 1/2 cups organic rolled oats (approx 150gm)
1/2 cup organic dessicated or flaked coconut
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
1 - 2 tbsp. organic maple syrup (optional)
3 - 4 tbsp. coconut oil, extra virgin olive oil or macadamia nut oil
Method
Preheat oven to 160C fan forced.
Wash the apples and cut into wedges with the skin left on.
Place the apples in a large heavy based pot.
Combine with the water/apple juice, vanilla and cinnamon.
Cook over a medium heat for about 15 - 20 mins stirring occasionally until the apples have completely softened. Taste the apple and adjust vanilla / cinnamon to your taste.
To make the crumble: Combine the rolled oats, coconut, cinnamon, vanilla and maple syrup with the coconut oil (or oil of your choice) and rub the ingredients together with your fingers to combine.
Pour the apple mixture into a baking dish and scatter with the crumble mixture.
Bake for 30 - 40 mins or until crumble is golden brown.
Serve with coconut yoghurt.
Delicious served for a warming breakfast too!
